Sweet potato and falafel snacks
I’m not a huge fan of falafel, I find it usually a bit dry and crumby. However, this recipe, which I found on the Affordable Wholefoods website, deals with that and creates yummy snacks that I love in my lunchbox. They freeze well too, so you can make a double batch while you are at it. Serve with some mayo, pesto, or hummus.
Ingredients
500 gram sweet potato
1 cup falafel mix
3/4 cup of water
2 spring onion (or half a leek), chopped
1 tbsp tahini
1/2 cup flour (I used buckwheat)
100 gr feta (I used vegan feta)
pepper and salt
Method
Peel the sweet potatoes, cut in cubes and boil until soft.
Put the falafel mix in a large mixing bowl, add the water and let it sit for about 20 minutes. Add the sweet potato and all other ingredients to the bowl, mix it all together. Don’t worry if the batter is still a bit sticky. Line a baking tray with baking paper.
Place rough ‘balls’ of the mixture onto the baking paper with 2 spoons. You can flatten and smoothen them a bit.
Bake in the oven at 180*C, for about 20 to 30 minutes, depending on your oven and the size of your snacks. Ready when slightly browned and crispy on the edges. Don’t bake too long or they will get too dry.
