Cauliflower fried rice

Love fried rice? Want a healthier option and boost your vegetable intake? Try cauliflower fried rice! Easy, quick, and your tummy will love it. Stir-fry your veggies and preferred protein ( tofu, chicken, egg, cashews), as you would for normally do for fried rice, with garlic, ginger, or any way you like it. In a food processor, pulse cauliflower florets into ‘rice’. Add the cauliflower rice to the stir fried veggies, and fry for a few minutes. Add some soy sauce if you like.
