Healthy chocolate coated slice
We all want a little treat sometimes, this one satisfies and keeps it healthy! So easy to make. Lots of room for creativity, you can use whatever nuts or seeds you have, just stick to the volume. The dates (or figs, or a combination), will keep it all together. Do use a liquid sweetener (maple syrup, coconut syrup, date syrup), instead of a solid one (coconut sugar, xylitol), liquid mixes in, the solid ones don’t dissolve, I’ve tried.
Ingredients:
For the base
10 dates or figs
2/3 of a cup of nuts or seeds
1/3 of a cup of shredded coconut
1/3 of a cup of buckwheat groats
For the topping
1/3 of a cup of coconut oil
1/3 of a cup of cocoa powder
2 tbsp of liquid sweetener like coconut syrup, maple syrup, date syrup
Method:
Take the seeds out of the dates. Cover the dates/figs with boiling water and let soak for about 30 minutes. Then drain, ( use the water for something else, it will be delicious).
Put all the dry ingredients for the base in a food processor, when ground into little pieces, add the dates/figs, until it all holds together. Line a small loaf tin with baking paper and spread the mixture evenly, push it down. Mix the ingredients for the topping, (gently melt the coconut oil if it’s solid), then pour it over the base. Put in the freezer to solidify the topping. Once solid, take the slice out of the tray and cut in fingers or squares. Put in air tight container and keep in freezer or fridge. Feel free to indulge!
